¡Cuánto impacto ha tenido masterchef en esta sociedad!
El caso es que tengo una fiesta con concurso de pinchos incluidos, y voy a hacer estas piruletas de aperitivo rellenas de foie y cebolla caramelizada.
Presentación en piruleta:

Hacer el relleno mezclando foie con la cebolla caramelizada.
Si los palos son de madera, y los vamos a hornear, mejor mojarlos en agua antes de meterlos en el horno.
Extender la pasta, rellenar con el palo en medio y hornear a 190 ºC durante 15 minutos.
Con este pincho ganamos 3 premios:
Base 28cm: como la del Quiche Lorain pero con azucar
Rellenos
Base:
Mezclamos el azucar y el huevo, precalentamos la mantequilla (pero no demasiado para no cuajar el huevo) y lo mezclamos también. Añadimos la harina poco a poco.
Compota:
Cocemos 740g de Manzana con 114g azucar y 1/4L agua y un chorro de limón hasta que se deshaga un poquito. Colamos y guardamos el caldo.
Tarta:
Horno:
Lo ponemos a 180 grados, cuando se dora un poquito la manzana (mas o menos media hora) la sacamos del horno, y echamos por
encima un poco del caldo reducido.
Pongo dos medidas, para cuando hago bizcocho, y para cuando hago unas 12 magdalenas

250 tableta de chocolate de cobertura
50 gramos de mantequilla ( no margarina)
50 mililitros de nata para montar
Prueba:
70g chocolate
25g mantequilla
3 huevos pequeños
160 gr. de harina de repostería
160 gr. de azúcar glas
80 gr. de mantequilla
Molde para tarta de unos 20 cm
Ingredientes Para 6-8 raciones:
1 Pesar los ingredientes:
Lo suyo es que la harina, los huevos y el azucar pesen lo mismo. Asi que si los huevos son grandes o pequeños, habra que ajustar las cantidades.
2 Azúcar glas:
Si no tienes la puedes improvisar en el molinillo de café. Para quitar sabores a café primero mueles un poco de azúcar y la tiras, luego ya usas la que necesitas para
este plato.
3 Separamos las claras de las yemas:
metiendo las claras en la nevera en un recipiente metalico frio, en el que luego montaremos las claras mientras hacemos el resto, para que estén bien frías cuando
las necesitemos.
4 Fundir la mantequilla
En el microondas a potencia mínima calentar hasta que esté cremosa,
5 Montar las yemas:
En un bol amplio ponemos las yemas y la mitad del azúcar glas y batimos con la batidora eléctrica de varillas empezando a baja velocidad, y subiendo poco a poco la velocidad, estando el tiempo necesario hasta que doble el volumen y esté blanqueada la mezcla (necesitaremos varios minutos).
6 Agregar la mantequilla a las yemas montadas.
En ese momento echamos la mantequilla batiendo otro poco
7 Agregar la harina
después la harina tamizada, continuando mezclando bien. Nos quedará una masa bastante espesa, pero untosa, si no esta untosa, agregar un poco de leche.
8 Montar las claras a punto de nieve
Sacar la cazuela metalica que contiene las claras, que ya estara muy fria, y en ella misma empezamos a montar las claras (que también estaba frías). Las trabajamos mucho, hasta que estén a
punto de merengue, bien duras. También necesitará su tiempo, quizás hasta 8-10 minutos. Más o menos en la mitad le
echamos la otra mitad del azúcar que teníamos reservada.
9 Precalentar el horno:
Precalentar el horno a 170 ºC.
10 Mezclar la masa de las yemas con las claras a punto de nieve Cuando estén bien montadas las claras las vamos agregando al bol de las yemas poco a poco, y las incorporamos suavemente con una espátula. con movimientos envolventes, para que no se pierda el aire que se ha integrado en las mismas.
11 Verter en el molde
Engrasar el molde con con mantequilla y enharinarlo, Luego verter la masa en el model, procurando dejar bien lisa la
superficie.
12 Hornear
Horneamos durante 40 minutos a 170oC. Entoces meter un pincho que debe salir seco, en caso contrario agregar un poco mas de tiempo. 5 minutos antes de que se finalize la cocion, epolvorear azucar sobre la parte superior, y seguir horneando.
No tiene que dorarse más que un poco.
Lo dejamos que se temple en el molde antes de desmoldarlo.
